Omelette Cupcakes



What a cutie this is! The recipe is so easy to make and more importantly, it is really good for you. An omelette is pretty much like a pizza, you put in whatever you like, but to keep it healthy, try to avoid cheese, butter or cream, better chop up some leftover veges like zucchini, capsicum, tomato etc. you can get quite creative here. These are the ingredients I have used for four omelette cupcakes:

Get about four medium sized mushrooms, chop them up and spread them into four cups of a muffin baking tray. Get a small onion and chop up half of it very finely, add to the mushrooms. Chop up one big slice of  ham and add as well. 

Now get five eggs, crack them into a bowl and whisk them with an egg beater. Season with salt, pepper, and paprika. Pour the same amount of egg into each of the cups. Put your baking tray into the oven for 20 minutes at 180 degrees Celcius or until your omelette cupcakes are fully cooked. Serve with fresh parsley and a slice of toasted bread. Enjoy!
