Mind blowing pancakes


If you wake up in the morning with a sweet tooth, pancakes are just an amazing breakfast option. A foodie on instagram inspired me for this dish, by using bananas instead of flour. I have added a few changes to the recipe, to make it a really special breakfast that you will be looking forward to, when you are going to bed the night before! 

Banana-Hazelnut pancakes

Recipe for one portion or three small pancakes:

Take two bananas and hash them with a fork in a bowl. Don't make a pulp out of it, leave some chunks a bit bigger. Crack in one egg and add a good pinch of cinnamon. Stir the egg and banana together. Put a large pan on a medium heat and drizzle in some hazelnut oil. 

When the pan is hot, put three heaped tablespoons of your "dough" into it and sprinkle some crushed hazelnuts on top.  Let your pancakes brown nicely on each side for about 3 - 5 minutes. Don't be tempted to flip them over too early, it will just break your pancake. To add an extra kick  to your dish, squeeze the juice of one mandarin over it, while still frying. 

When your pancakes have a nice color on each side, put them on a plate, and put a few sliced grapes on top as well as a small handful of crushed hazelnuts. Add some more cinnamon and decorate with mint. Enjoy!
