Super fresh salad


I can imagine, that some of you don't fancy the idea of fruit in a salad. Well, as long as it is not a fruit salad. The the combination of mango, avocado, chili and ginger is amazingly fresh and they just go so well together. And I'm sure you don't always want to eat the same old boring salad. So give this goody-goody a try and start chopping!

Ingredients for four people: Spicy mango salad

Get a classic iceberg salad and chop of about half of the head of lettuce. Wash your leaves , drain them, chop them up and spread them on a serving platter. Get a large, ripe mango and slice it down lengthways, so you chop off the two bigger sides, avoid the stone. 

Now here is how you get the fruit out of the skin: Take your two halves and cut criss-cross threw the fruit down to the skin, (do not cut the skin) so that when you push the skin in the other direction, the mango cubes will be pushed out and you can easily chop them of the skin. Put a few cubes to the side, for the dressing later.

Now get a ripe avocado, halve it and get the stone out, then peel it and chop it up. Add mango and avocado to the iceberg lettuce. Now take the half of one large chili and chop it up finely. If you don't like to taste the heat of it too much, then avoid any bigger bits, just hackle it up really finely and add to your salad. Now to add a nice contrast get about 100 grams of Gouda cheese. You can buy that as snack food, already cut into cubes. If your cubes are quite big, just halve them again and add to the salad. 

To make the dressing you put about 50 ml of yogurt, the other halve of your chili, your leftover mango cubes , the juice of one small lemon, about 2 tbsp of honey, a thumb sized peace of peeled ginger, a good splash of water, about five mint leaves with stalks and a good pinch of pepper and salt into your blender. Now let it blend your dressing, so you end up with a nice puree. Taste it and have a think about it. Does it need a bit more salt and pepper, or more honey, or do you even want to add a bit more chili? Refine it to your likes and pour the dressing over your salad. Add some mint leaves for extra freshness. Enjoy!
